Zucchini Rolls with Bacon and Cheese

A tasty, quick recipe with very low carbohydrates. Perfect as an appetizer or a delicious main course fitting a ketogenic diet.

Zucchini Rolls with Bacon and Cheese

Zucchini2 medium (about 400g/14oz)
Cream cheese100g (3.5oz)
Grated Parmesan50g (1.75oz)
Smoked bacon slices8 slices (about 120g/4.2oz)
Dried oregano (optional)1 teaspoon (1g/0.04oz)

Black pepperto taste

Preparation

  1. Preheat the oven to 200°C (390°F) in static mode.
  2. Wash the zucchini and slice them thinly lengthwise using a mandoline or wide vegetable peeler.
  3. Heat a non-stick pan (without oil) and grill the zucchini slices for 1-2 minutes per side, until they become soft but not overcooked.
  4. In a bowl, mix the cream cheese with parmesan, a pinch of salt, pepper, and oregano (if you like).
  5. Spread some of the cream mixture on each zucchini slice.
  6. Roll up the filled slices to form rolls.
  7. Wrap each roll with half a slice of bacon.
  8. Place the rolls on a baking sheet lined with parchment paper, with the bacon side facing down.
  9. Bake for 15 minutes or until the bacon is nicely browned and crispy.
  10. Serve immediately, perhaps with an extra sprinkle of parmesan or a fresh basil leaf.

Extra Tips

  • You can replace the bacon with speck or prosciutto.
  • For a vegetarian version, omit the bacon and add chopped nuts to the filling.
  • The rolls are also great at room temperature!
